Easy Gluten Free Pizza Dough Recipe

This easy gluten free pizza dough recipe ONLY involves two ingredients. Making it perfect for those times you’re craving a pizza and have a limited pantry!

I will be the first to admit that I LOVE pizza! Like truly, if I could, I’d eat it practically every day.. Which I’m sure would be frowned upon, but hey it’s delicious! But finding gluten free pizza dough on the other hand is a bit tricky. Usually you can find a premade crust at the store but it’s either frozen, floppy or just plain unappealing..

Enter in the sweet potato! This orange-colored veggie combined with GF All Purpose Flour makes an easy and fast GF pizza dough. You’re probably thinking, “cool, but when do I add the yeast??” and my answer is, you don’t need to!  Ugh, that’s truly what makes this recipe so great! 

No need to wait for dough to rise, or measure out yeast.. The sweet potato acts like a sort of glue and keeps all the flour together while adding a little bit of rise (a little bit, this isn’t magic folks just a sweet potato trying hard). This crust comes out perfectly soft and filled with the right amount of chew and crunch!

When creating this recipe, I lived with roommates who weren’t gluten free so this recipe is based on an “individual size” pizza. However, if you feel kind enough to share just double the ingredients. Read below for the recipe!

Recipe ingredients notes

Sweet Potato: You will need about 1 cup of sweet potato puree for this recipe. I’ve always made this recipe using a fresh potato and then breaking it down myself to a puree (explained in steps below), if short on time, you can also use a store bought sweet potato puree.  

Gluten Free All Purpose Flour:  make sure to use an all purpose flour instead of a cake flour (as that will make your dough more cakey). Any gluten free all purpose flour will do.

Seasonings (optional): great seasoning pairings are; garlic, oregano, and basil.

My recipe for Easy Gluten Free Pizza Dough requires minimal equipment. You will need one (1) mixing bowl, one (1) mixing spoon, measuring cups, microwavable safe bowl, and one (1) baking pan or pizza stone. Two (2) forks will also be needed, as it makes it easier to shred apart the sweet potato. 

how to make Gluten Free Pizza Dough

Step 1: Preheat the oven to 400°F (204°C).

Step 2: Begin making sweet potato puree by taking 2 medium orange-fleshed sweet potatoes (also called a yam) rinse and scrub them to get any remaining dirt off. Using a fork, stab holes around the surface of the sweet potatoes. Place them in a microwave safe bowl and microwave on high for 5-7mins, until very soft. To keep them from drying out, place a wet paper towel on top while microwaving for moisture. Once soft, remove from the microwave and peel off the skin of both potatoes; then mash in a bowl using two (2) forks until it has the consistency of applesauce. Set aside to cool. *Add optional seasonings at this step if desired (garlic, dried oregano, etc.*

Step 3: Once sweet potato puree is cool enough to work with, place in a mixing bowl and begin gradually adding 1-2cups of Gluten Free All Purpose flour. Only add 1 cup of flour at a time; continue adding until the ball of dough begins to form.

Step 4: Roll out dough thinly into the shape desired. Pinch edges to make a small crust.

Step 5: Place dough on a baking pan (or pizza stone) and bake at 400°F (204°C) for 10 mins, or lightly toasted. 

Step 6: Once lightly toasted, remove from the oven and top with your favorite pizza sauce and toppings. Place back in the oven to continue cooking for about 20mins, until cheese is melted and toppings are toasty.
